Chemically the main difference between oils and fats is in
the relative proportion of saturated and unsaturated acid groups present in the
glycerides. In general, a fat contains a high proportion of saturated acids
group in the Glycerides and solid at room temperature while oils have more
unsaturated acids groups and liquid at room temperature. Thus fats are predominantly
saturated while oils are mainly unsaturated.
