What is Rancidification of oils or fats ?


On long exposure to air and moisture, fats and oils develop a disagreeable smell and taste. This phenomenon is known as Rancidification. It involves the formation of bad smelling, fatty acids and carbonyl compounds by the hydrolysis or oxidation of fats and oils.

What is the difference between oils and fats ?


Chemically the main difference between oils and fats is in the relative proportion of saturated and unsaturated acid groups present in the glycerides. In general, a fat contains a high proportion of saturated acids group in the Glycerides and solid at room temperature while oils have more unsaturated acids groups and liquid at room temperature. Thus fats are predominantly saturated while oils are mainly unsaturated.
