What is saponification reaction ?

We know that triacyl derivatives of glycerol are called (triesters) glycerides. And chemically fats and oils are glycerides. Glycerol and soap is prepared from glyceride by treating it with aq. NaOH. The reaction is called the saponification reaction.

What is the difference between oils and fats ?

Chemically the main difference between oils and fats is in the relative proportion of saturated and unsaturated acid groups present in the glycerides. In general, a fat contains a high proportion of saturated acids group in the Glycerides and solid at room temperature while oils have more unsaturated acids groups and liquid at room temperature. Thus fats are predominantly saturated while oils are mainly unsaturated.

What is fats and Oils ?

Fats and Oils are widely distributed in living organisms. Chemically; these are esters of higher aliphatic monocarboxylic acids with glycerol, and are therefore also called Glycerides. There are no sharp distinction between oils and fats . Glycerides which are solids at room temperature are called fats while those are liquid at room temperature are called as oils. For example ; Butter, coconut oil, groundnut oil etc. General formula of fat and oil may be:
